Try this savory, healthy dish from Chef Antoine Sicotte: slightly sweet Blushing Belle halves on skewers, mixed with tender marinated chicken over a bed of Greek salad (cherry tomatoes, cucumber, red onion, feta and kalamata olives). The topper is the tangy dressing, spiked with lemon, oregano and Dijon. Serve this meal with a side of grilled pita bread.
This light and appealing meal-in-one dinner is fast and focused on fresh flavors. Scale it for just you two, the whole clan or a party with friends. And if you don’t want to heat up the house, just cook the casserole in a metal dish on the BBQ with the lid closed.
