It actually marks an 1862 military victory. But over the years, the minor Mexican holiday Cinco de Mayo (the fifth of May) has morphed into a major celebration of all things Mexicano—culture, heritage, festivals, parades, traditions, music, food—particularly in the U.S. and especially in areas with large Latino populations.
Why not? Who doesn’t love a fully loaded taco, frosty Patrón Silver margarita, and some peppy mariachi tunes? So in honor of this Cinco de Mayo, here are our favorite Mexican-inspired recipes starring Little Potatoes. ¡Fantastico!
If you’re craving the rich flavors of smoky bacon and gooey cheddar, this dish is for you—a hearty side to accompany grilled chicken or pulled pork: Dynamic Duo Creamers smothered in cheese, bacon and green onions, seasoned with Ranch and taco spices. And, it takes only 15 minutes to prepare.
Just five minutes to prep and 10 to cook, these tacos are also vegan and gluten-free. Tucked into soft corn tortillas, the filling is made of sweet, earthy Blushing Belle Creamers and soy chorizo, plus fresh cilantro and pico de gallo. Squeeze over a little lime to add zest.
This fully loaded, healthier-than-usual chili will fill you up. A low-cal, healthy Nachos alternative, this meal-in-one combines Terrific Trio Creamers with black beans, peppers and Mexican spices, grilled til browned and tender. Then you top it with the works: guacamole, salsa, sour cream or low-cal plain yogurt, grated cheese, cilantro, and lime. It’ll be hard to go back to the ho-hum traditional version after you’ve tried this potato salad twist. Fresh flavors feature prominently in this colorful side dish, optimal for potlucks and outdoor dinner parties.
